Cool Down with these 4 Boozy Popsicle Recipes!

As temperatures rise and the summer sun shines bright, it's time to cool down with a fun and adult twist on a classic treat – boozy popsicles. These frozen delights not only offer a refreshing respite from the heat but also bring a burst of spirited flavour to your summer festivities. Get ready to embark on a journey of frozen bliss with these four irresistible boozy popsicle recipes.

 

Scavi & Ray Prosecco wild Berry Popsicles

Makes 4 Popsicles


Ingredients:

200 ml SCAVI & RAY Prosecco

1 pinch of vanilla extract

4 tbsp sugar

125g berries, frozen

30ml cassis liqueur

4 popsicle sticks



Method

  1. Puree the frozen berries

  2. Add vanilla extract, sugar and cassis liqueur to the berries and stir

  3. Fill the berry puree into four small glasses and fill them with sparkling SCAVI & RAY Prosecco

  4. Stir well so the prosecco is mixed with the puree

  5. Place the glasses in the freezer for an hour so that the mixture freezes slightly.

  6. Add four ice cream sticks in the middle of the glasses and place them in the freezer for about 6 hours till they are ready!

Frozen Strawberry Daiquiri

Makes approximately 8 popsicles.


Ingredients

100 ml Hope Rum

100 ml simple syrup

100 ml lime juice

300 ml quartered, fresh strawberries.






Method

  1. Add all the ingredients to a blender and blend until smooth.

  2. Add quartered strawberries into the blender until the liquid reaches the 600ml and blend

  3. Strain the mixture and pour it into popsicle moulds, leaving 2cm of space for the liquid to expand when it freezes. Freeze for at least 8 hours.

  4. Add the popsicle sticks about 2 hours after freezing, so it doesn't sink to the bottom.

Vodka Lemonade Popsicle

Makes approximately 8 popsicles.


Ingredients

1 cup (250ml) lemon juice

2 cups (500ml) water

3/4 cup (155g) caster sugar

1 lemon thinly sliced.

1 cup Stoli Vodka





Method

  1. Make lemonade by combining lemon juice, water, and sugar in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves.

  2. Remove from heat.

  3. Transfer to a jug and add lemon juice

  4. Place in the fridge to chill

  5. Add 1 cup of Stoli vodka and stir until well combined.

  6. Add to popsicle moulds leaving 2cm of space for the liquid to expand when it freezes.

  7. Add the popsicle sticks about 2 hours after freezing, so it doesn't sink to the bottom.

  8. Freeze for another 8 hours


Paloma Popsicle

Makes approximately 5 popsicles.


Ingredients

400ml fresh grapefruit juice, strained.

80ml agave syrup

25ml fresh lime juice

25ml Rooster Rojo Blanco Tequila





Method

  1. Combine grapefruit juice, agave, lime juice, and tequila,

  2. Divide among five popsicle moulds.

  3. Secure popsicle sticks once the moulds have been in the Freezer for about 2 hours, add the ice lolly sticks, and freeze until firm, at least another 4 hours.
